Ingredients

  • 1 Tbsp (15mL) ghee or avocado oil
  • ½ large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp (5mL) minced ginger
  • 1 Tbsp (15mL) tomato paste
  • 2 tsp (10mL) cumin
  • 1 tsp (5mL) turmeric
  • 1 tsp (5mL) coriander
  • 1 tsp (5mL) paprika
  • 1 cup (250mL) strained tomatoes / passata
  • 1 can (19oz / 540 mL) chickpeas, drained and rinsed
  • 2 cups (500mL) red bell pepper, chopped
  • 1 can (13.5oz / 400 mL) coconut milk, full fat
  • 1 or 2 large handfuls of spinach (or greens of choice)

Instructions

  1. Heat ghee/oil in a large pan over medium heat, and add the onion, garlic, and ginger. Sauté for 2 minutes.
  2. Add the tomato paste and spices, and stir for 1 minute or until fragrant.
  3. Add remaining ingredients (except spinach), bring to a simmer, and cook, 15-20 minutes, stirring occasionally. Stir in spinach or greens of choice, remove pan from heat, and serve over quinoa or rice.
