Wild Rice Protein Power Salad

Serves: 4-6 servings
Ingredients
  • 2 cups cooked wild rice (prepared as outlined above)
  • ½ cup grated carrot
  • 1 red pepper, coarsely chopped
  • ½ cup parsley, coarsely chopped
  • ¼ cup green onion, chopped
  • 14 oz grilled chicken or sautéed organic tofu
  • ½ lemon, juiced
  • 2 Tbsp olive oil
  • 2 Tbsp flax oil
  • Sea salt to taste
Instructions
  1. Prepare all ingredients as outlined.
  2. Toss in large mixing bowl and serve at room at room temperature.
  3. Will keep in the fridge for 3 days.
