Expert Spotlight: Keisha Luke

There’s nothing we love more than checking in with our grads to see how they’re improving their own health, the health of their families and (sometimes) the entire world. Today, we’re chatting with Keisha Luke, graduate of the Fall 2014 edition of the Culinary Nutrition Expert program.

How would you describe your current day job?

My current day job is extremely fun and always full of surprises. Every day I get to create and test an array of recipes, many of which I use in my meal planning, in-home cooking/catering and programs.

How has the Culinary Nutrition Expert Program changed your perspective on health and cooking?

The Culinary Nutrition Expert Program has expanded my perspective on gluten-free, vegetarian and vegan cooking. I am always seeking new information on health and new nutritional cooking styles/techniques, and this was the program that offered me all of that. It has given me the knowledge and tools to transcend boundaries and move outside of my comfort zone, while feeling confident in experimenting and taking risks with every meal.

What has been your best culinary nutrition creation?

Since my love for cooking has also become a love for baking, my best culinary nutrition creation has been my Black Bean Maca Brownies.

What was the most rewarding part of the program for you?

The most rewarding part of the program was receiving some awesome advice and positive feedback from my TA; and knowing my love for nutrition and food is something I will continue to share with the world.

How have you been putting what you learned into practice in your life, your business and/or helping someone else?

Everything that I have learned in the CNE Program has been brought to life 10 times more than when I first began the program. My business requires me to assist people in transitioning from unhealthy eating habits to a healthier lifestyle. Now I do that a lot more through not just my nutritional consultations, but my culinary skills. I do a lot more in-home nutritional hands-on cooking classes, as well as catering and food services with others.

What has changed in your life since you completed (or perhaps since you began) the CNE Program?

Since completing the CNE Program, I have been inspired to share my knowledge and passion for cooking nutritious foods worldwide. I have developed a new program, 40 Days to Digestive Healing, where I use foods in order to maintain a healthy lifestyle and ultimately healing many digestive conditions. I will also be launching my own e-book in 2015.
